Grapes are grown in the Elgin and Villiersdorp areas. Soils on the different sites range from decomposed sandstone to decomposed Bokkeveld Shale with underlying clay layers of varying depths. Variety of aspects, soils and row directions makes it possible to grow grapes expressing its origin, with each vineyard adding different characteristics to the final blend.
Grapes are all handpicked at optimal ripeness during the season, before being destemmed. Once fermentation started, the skin cap received gently pump-overs twice per day to achieve desired extraction. Post fermentation the wines underwent extended maceration and were tasted regularly in order to assess the extraction level and when to press-off. Once pressed off, the wines underwent spontaneous malolactic fermentation in stainless steel tanks, after which the wines were racked and spent 12 months in stainless steel tanks.
The Sophie range of wine comprise the Sophie te’Blanche, Sophie le Rosé and Sophie le Rouge produced by Iona from carefully selected vineyard sites in the Cape South Coast, resulting in delicious, high quality wine.
